How did this get made?
We simply wouldn't be a bakery without it, would we?
Flour
For the basic bread, we use Cairnspring Mills’ Organic Expresso T85 Bread Flour.
Rustic, spicy and caramel-colored, this flour is a cross of Express and Yecora Rojo hard red spring wheats. Their grains are primarily grown in the rich fertile soil of the Columbia Basin, harvested on land that's primarily dedicated to producing other crops, like onions. Planting grain is a way for the farmers to rest their fields between vegetable harvests and disrupt pests and disease without the need for chemical interventions that can harm the soil.
Water
We're gonna be real with you. Our well water just happens to taste pretty damn good.
Salt
Sea Salt from the San Juan Salt Co - manufactured right here in Washington using sunlight and ocean water.
