This loaf balances the sweetness and richness of the fillings with a nutty, wholesome blend of organic whole wheat and T85 filtered Expresso whole wheat (Cairnspring Mills) alongside rye flour from the kind folks at Chimacum Valley Grainery.

• Expresso wheat: grown in the Columbia Basin, ground in Burlington, WA
• Center Valley Rye: Grown in the Center Valley near Chimacum

Fillings

Cranberries and raisins provide a balanced sweetness and a truckload of walnuts round out the texture.

The loaf makes for great mountain fuel - the sweetened cranberries and raisins offer simple carbohydrates while the whole wheat flour's complex structure takes more time to digest. The walnuts provide fat and even more protein for all-day energy.
